Rosemary Flowers

Rosemary is a herb which flowers in the spring.

Rosemary flowers can be used as a candy.

To make Rosemary Sugar Candies:

  • collect the flower petals
  • drop the petals into a bowl of warm, dry white sugar
  • place the bowl in a warm, dry, airy place so that the moisture from the flowers will pass into the sugar and then evaporate from the bowl
  • shake the bowl twice a day
  • when quite dry place the mixture in an airtight jar
  • use to decorate cakes, puddings and sweets

Rosemary petals contain the same volatile oil as the leaves which:

  • has medicinal & culinary uses
  • improves memory, relieves muscle pain and spasm, stimulates hair growth, and supports the circulatory and nervous systems
  • contains antioxidants thought to work against cancer

Too much Rosemary is toxic, so eat in moderation!
