Is rhubarb safe and good to eat, AFTER it has started to flower?
Not the flower or the flower stock, but the regular rhubarb that we pull to eat?

Hi Karl
Rhubarb stalks are safe to eat if the plant is flowering – but it is not a good idea to let it flower. It will use up lots of energt, so we break the stalk off. Also, we do not eat the rhubarb after June because we want the plant to build up energy and remain strong for next year.
