Mr Leonard’s Marjoram Sausages - HerbDay2007

sausageMarjoram is the secret ingredient in Mr Leonard’s marjoram sausages, produced by East Riding Country Pork, in true field to fork style. Peter Kirkwood grows the wheat to feed to his pigs & set up ERCP to butcher & sell the meat. The pigs travel just 2.5 miles from the farm to the slaughter house, and a further 3.7 miles from the abattoir to the ERCP butchery. These happy, unstressed pigs make beautiful sausages full of flavour. There is a farm shop on the premises and a ERCP van takes the produce to local Farmers Markets.

Mr Kirkwood’s daughter, Rebecca, left her job with farmer and land agent, Guy Leonard, to help run the farm shop. But her old boss, with fond memories of marjoram sausages, pleaded with ERCP to make some. He even brought the marjoram from his own garden!
